I. PRODUCT DESCRIPTION
DRIED APPLES
are prepared from sound, mature, fresh fruit which has been washed, cored, peeled, cut to desired size, sulfured, and tunnel-dried. The product is inspected throughout the process to assure conformance to good manufacturing practices, yielding a clean, wholesome product which meets all standards for human consumption, including compliance with provisions of the Federal regulations.
II. PHYSICAL

Color: white to light yellow, reasonably uniform,
and characteristic of the variety.

Flavor: lightly sweet, typical of the variety, and free from off flavors.
|

Defects: reasonably free of defects as defined by the Dried Fruit Association (DFA) of California standards for dried apples.
|
| D.
|
Sizes: available in the style of rings (choice), diced (1/4") and paste (1/8" and 3/32" grinds)

III. CHEMICAL

Moisture: 22-30% as determined by DFA moisture meter.

Sulfur Dioxide: 1000-3000 ppm.

VI. STORAGE/SHELF LIFE
| This product is best stored in cool, 40-50°F or less, dry (50-60% RH) conditions. For optimal quality use product within 12 months. Store at 32°F or less for prolonged shelf life.
