I. PRODUCT DESCRIPTION
California Dried Pitted Bing Cherries
are prepared from sound, mature, fresh Bing cherries which have been washed, tunnel dried, stemmed and pitted. The product is inspected throughout the process to assure conformance to good manufacturing practices, yielding a clean, wholesome product which meets all standards for human consumption, including compliance with provisions of the Federal regulations.
II. PHYSICAL

Color: black, with hints of dark red, reasonably uniform
and characteristic of unsulfured dried Bing cherries.
|
| B.
|
Flavor: sweet to tart, typical of the variety, and free from off flavors.
|
| C.
|
Defects: For large size - 2 pits or pit fragments longer than 2 mm in 40 ounces.
For small size - 4 pits or pit fragments longer than 2 mm in 40 ounces.

| D.
|
Sizes: Large pitted - less than 22 cherries per ounce.
Small pitted - more than 22 cherries per ounce.
Dices (1/4") and double-diced i.e. diced twice using 1/4" dice plate.
Paste (3/32" and 1/8" grinds).

III. CHEMICAL

Moisture: 18-23 % for ready-to-eat, 12-16 % for confectionary manufacturing, 15-20 % for dices, and 18-24 % for paste as determined by DFA moisture meter using the prune chart.

VI. STORAGE/SHELF LIFE
| This product is best stored in cool (40-50°F), dry (50-60% RH) conditions, and should be used within 6 months for optimal quality. Store at 32°F or less for prolonged shelf life.

| This product is certified as kosher pareve for Passover by the Orthodox Union *OU

VIII. NON-GMO STATEMENT
| This product is 100% free from genetically modified organisms.

IX. MSDS STATEMENT
