I. PRODUCT DESCRIPTION
California water-dipped raisins are prepared from sound, mature, fresh grapes of Vitis vinifera, such as Thompson Seedless, which have been washed, stemmed, dipped in hot water to crack the skin, and sun or tunnel dried. The product is inspected throughout the process to assure conformance to good manufacturing practices, yielding a clean, wholesome product which meets all standards for human consumption, including compliance with provisions of the Federal regulations.
II. PHYSICAL

Color: brown to dark brown, characteristic of water-dipped raisins.

Flavor: sweet to tart, typical of the variety, and free from off flavors.

Defects: grade A for stems and cap-stems, and grade B or better for other defects as defined by the USDA standards for raisins.

Jumbo (less than 900 berries per pound)
Select (approximately 900-1200 berries per pound)
Ungraded (approximately 1000-1500 berries per pound)

VI. STORAGE/SHELF LIFE
| This product is best stored in cool (40-50°F), dry (50-60% RH) conditions, and should be used within 12 months for optimal quality. Store at 32°F or less for prolonged shelf life.
