Dried Fruit Purees and Butters
Zoria Farms is both excited and proud to offer a very unique product to the food ingredient industry. Working together with Midway Farms, a third generation prune and raisin grower/packer/shipper family business, we have perfected a puree' made from 100% dried fruit resulting in a smooth, soft, butter-like texture that can be poured and pumped as delivered.
With over 200 years combined expertise in the dried fruit industry as growers and processors we know dried fruit! With our patented method we are able to create a smooth, consistent, natural product with taste and texture superior than traditional dried fruit pastes. We are able to manufacture puree's from sun dried fruit with sulphites, natural sulphite free dried fruit, and select organic dried fruits depending on seasonal availability.
Zoria Farms can also create dried fruit butters. Our dried fruit butters have had the skin removed and have a slightly more butter like texture.
Our butters and puree's are 100% user friendly. They are pumpable, pourable, and squeezable. From adult nutritional drinks to energy bars, steak sauces to fat free brownies, ice cream to sprayed cereal coatings, our 100% natural pure dried fruit puree's are the most innovating and practical ingredient additive the dried fruit industry has discovered for decades. Any product that demands an all natural additive to retain moisture, bind products, add antioxidants and fiber, and extend shelf life is a candidate for our puree's.
Studies have shown Dried Plum Butter helps eliminate E-coli, Salmonella, and other food-borne pathogens when added to meat products. Dried Pear Puree replaces caramel coloring, corn syrup, BHA/BHT hydrolyzed vegetable protein and more. Research has determined that dried fig butter contains heart healthy Omega-3 and Omega-6 essential fatty acids. These are just a few of the benefits of our dried fruit puree's and butters. Zoria Farms dried fruit puree's are available in 1 and 5 gallon pails, 55 gallon drums and we can also pack into your choice of retail jars to create or compliment your own line. Our prune or raisin butters work as a straight butter or oil replacement for baking, or replace 50% butter or oil with Zoria Farms dried fruit puree's for healthy, low fat eating.

RECIPES
Juicy burgers
Add 1 pound of prune or raisin puree for every 9 pounds of ground beef.
Season with salt, pepper, and/or garlic salt.
The meat will remain redder longer, and have a fresher, meatier, juicier taste. If pre-cooked and reheated will help retard WOF (warmed over flavor).
Milkshake
For each gallon of whole milk, add 1 cup raisin puree, 1 cup of sugar, and 1/4 cup cornstarch. Heat to over 160 degrees until starch begins to thicken, agitating constantly. Add other fruits while thickening. Cool in refrigerator until ready to serve.
Barbecued Beans
For each No. 10 can of beans add 1 cup raisin puree. Mix well without damaging beans.
Raisin Jam
Mix 10 pounds of sugar, 10 pounds ofĘpuree, and 2 pounds of water. Dissolve sugar in water, add to raisin puree, and heat until sugar and puree blend well. No need to heat above boiling.
Raisin Cream Cheese
Mix until smooth, 10 pounds of raisin puree to 10 pounds of cream cheese. Also excellent with cottage cheese, or yogurt. Spread on bagels or toast.
Cereal Coating
Heat raisin puree until it begins to soften. Mix with cereal such as Raisin Bran or Oatmeal. Coat cereal with puree, then bake 10 minutes at 350 degrees.
Granola Bars
Combine raisin puree with oatmeal until it forms a sticky mass. Place in greased sheet pans and bake at 350 degrees until oatmeal begins to brown (approximately 45 minutes).
Brownies
To a normal brownie mix, replace half of the dry mix with raisin puree, and add the same amount of water and eggs. The brownies will come out moister and do not need to be iced. A serving size of dried fruit is 1/4 cup dried fruit which will be about 1 1/2 ounces. A four ounce brownie will equal 1 fruit serving.
Bread
When making loaves of bread, smash the dough into a loaf-size piece and smear 1/4 cup dried fruit puree on the smashed dough. Roll into a piece ready for the loaf pan and place in the pan. Raise and bake as usual.
Pastries
Place a scoop of dried fruit puree on a 3" x 3" square of pastry dough. Pinch the corners together to cover the filling, and twist slightly. Can also be made into a turnover.
Ice Cream & Yogurt
Pre blend or swirl into ice cream or yogurt. Add to smoothies two tablespoons per 6-8 ounces smoothie.
